- پودینہ پتے کٹے ہوئے آدھا کپ

- دھنیا کٹا ہوا آدھا کپ

- لال مرچ پاؤڈر 1 چائے کا چمچ

- ہلدی پاؤڈر آدھا چائے کا چمچ

- بریانی مصالحہ 1 چائے کا چمچ

- گرم مصالحہ آدھا چائے کا چمچ

- پانی 4 کپ

- کھانے کا تیل آدھا کپ

- نمک حسبِ ذائقہ

- زعفران کی دھاگ کا دودھ میں بھگوئی ہوئی


طریقہ:

  باسمتی چاول کو دھوکر 30 منٹ کے لیے پانی میں بھگوئیں۔ پانی کو نکال کر اسے الگ کر دیں۔

 ایک بڑے پین میں تیل گرم کریں۔ کٹی ہوئی پیاز ڈال کر سنہری براؤن ہونے تک تل لیں۔ نصف تلے ہوئی پیازیں نکال کر سائیڈ پر رکھ دیں۔ اسی پین میں ادرک لہسن کا پیسٹ ڈالیں اور خوشبو دار ہونے تک بھونیں۔ چکن ٹکڑوں کو شامل کر کے سفید ہونے تک پکائیں۔

 ٹماٹر، ہری مرچ، دہی، پودینہ، دھنیا، لال مرچ پاؤڈر، ہلدی پاؤڈر، بریانی مصالحہ، گرم مصالحہ، اور نمک شامل کریں۔ اچھی طرح مکس کریں اور 5-7 منٹ پکائیں۔

الگ برتن میں پانی کو اُبال لیں۔ بھگوئے ہوئے چاول ڈال کر اُبال لیں جب تک وہ 70-80 فیصد پکا نہ جائیں۔ چاول کو چھان ۔

بڑے کھولے پین میں نصف تک طہرہ چاول لیں۔ پھر اوپر سے پکی ہوئی چکن مکسچر ڈالیں۔ اس کو دوبارہ دہرائیں۔

 زعفران کی دھاگ کے دودھ کو اوپر کی طرف چھڑکیں (اگر استعمال کیا جائے)۔ چڑھے ہوئے دھکن کے ساتھ کم آنچ پر 20-25 منٹ تک پکائیں یا جب تک چاول مکمل طور پر پک جائیں اور فلفلہ ہو جائیں۔

جب تک بریانی پک چکی ہو، اسے چمچ کے زریعے ہلکا سا کھینچیں۔ اُوپر سے بچی ہوئی تلی ہوئی پیازیں چڑھائیں۔ گرم گرم رائتہ یا سلاد کے ساتھ پیش کریں۔
